Ingredients

For the Salmon

✓ 2 cups baby potatoes, halved

✓ 1 bunch fresh asparagus, trimmed

✓ 2 tbsp olive oil

✓ 1 tsp dried oregano

✓ ¼ cup shredded parmesan cheese (optional for asparagus)

✓ Fresh parsley, chopped


Method

Preparing

  1. Roast the potatoes: Preheat your oven to 400°F (200°C). Toss halved potatoes with olive oil, salt, pepper, and oregano, then roast on a sheet pan for 15–20 minutes until they begin to brown.

  2. Season the salmon: While potatoes roast, pat salmon fillets dry and rub with olive oil. Season evenly with paprika, garlic powder, salt, and pepper.

  3. Sear the salmon: Heat a skillet over medium-high heat. Place salmon in the pan and sear for 4–5 minutes per side until golden-brown and cooked to your desired doneness.

  4. Prepare the asparagus: Place the asparagus on the sheet pan with the potatoes for the final 8–10 minutes of roasting. If desired, sprinkle with shredded parmesan cheese for the last 3 minutes.

  5. Assemble and serve: Arrange the seared salmon on a plate alongside a generous portion of roasted potatoes and asparagus.

  6. Garnish: Finish the dish with a sprinkle of fresh chopped parsley.
